Peanut Butter Chocolate Chip Cookies – Cooking with The Vegan Zombie

In this video Jon goes back to the abandoned kitchen and makes some peanut butter chocolate chip cookies. Yum!

Peanut Butter Chocolate Chip Cookies
3/4 cups creamy peanut butter
1/3 cup Earth Balance Buttery Spread
3/4 cup sugar
1/2 cup almond milk
1/2 tsp vanilla extract
1/4 tsp salt
1 tsp baking powder
2 cups flour
1/2 cup vegan chocolate chips

mix everything together. Form small balls dip in sugar and place on cookie sheet.

350 degrees for 10-12 mins

I just made a double batch. I cut out the earth balance and put more peanut/almond butter in instead, substituted the flour for 1 cup oat flour and 1 cup whole wheat, 1/2 cup apple butter and 2 tbsp molasses instead of the sugar (molasses is a great source of iron!), and increased the amount of chocolate chips. Very nice.

I’m not a big fan of peanut butter, but I had some of it and I didn’t know how to use it nor I wanted to throw it away. Well, I made these cookies and they are amazing!

    We used regular organic peanut butter. It doesn’t have to be sweetened.

That jerk touched your cookies with dirty hands! Ugh, zombies… I haven’t tried these yet, but I’m pretty sure they’re going to be the most delicious cookie I have ever eaten. I was looking for a homemade version of the Alternative Baking Company peanut butter chocolate chip cookies, but I think these will be better.

And then I love how all the comments following (presumably from non-gay vegans) just politely ignored it like it never even happened, as if it were a loud fart in a fancy restaurant, and to acknowledge it would only make the situation worse. I was out of buttery spread so I subbed it with coconut oil… Holy peanut butter/coconut/chocolate deliciousness, Batman. I highly recommend this variation.

I used 1 1/4 c peanut butter instead of the Earth Balance, substituted 1 cup of oats for 1 cup of the flour, and increased the chocolate chips to 1 cup. My boyfriend and I ate half the batch in an hour.
