Pumpkin Muffins – Cooking with The Vegan Zombie

More fall themed recipes.
Vegan pumpkin muffins.
Wet Ingredients:
3/4 cup pumpkin puree (from previous video)
1/2 cup pure maple syrup
1/3 cup melted refined coconut oil
1 tsp apple cider vinegar
1/2 cup apple cider

Dry Ingredients:
1 1/2 cups unbleached flour
1 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
1 1/2 tsp baking powder
1 tsp baking soda
whisk together

Pour wet into dry and lightly mix it together until flour disappears.
Add 1/2 cup chopped dates
Add to muffin tray.
Jumbo muffins take 20 mins for 350 degrees
