Ingredients…

•3 Tbsp. natural sugar (I use an organic unbleached sugar)
•1 ¼ cups lukewarm water
•1 cup sourdough starter
•3 cups unbleached all-purpose flour
•1 cups whole wheat flour
•3 Tbsp. vital wheat gluten
•2 tsp. salt
•Everything Bagel topping from Trader Joe’s or make your own (optional)
•Vegetable oil for the rising bowl
•Salt for the boiling water (about 2-3 teaspoons per gallon)

Tomato Sauce:
12 roma tomatoes
3 cloves minced garlic
1 tsp dried basil
1 tsp dried oregano
pinch crushed red pepper
pinch black pepper
add the strained juice of tomatoes
1 tsp agave nectar (optional) or sugar
salt to taste

dice up tomatoes and strain the insides save juice.
add 1 tbsp olive oil to med heat sauce pan
add garlic and tomatoes
add strained tomato juice bring to boil then simmer 20 mins.

Vegan pumpkin muffins.
Wet Ingredients:
3/4 cup pumpkin puree (from previous video)
1/2 cup pure maple syrup
1/3 cup melted refined coconut oil
1 tsp apple cider vinegar
1/2 cup apple cider

Dry Ingredients:
1 1/2 cups unbleached flour
1 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
1 1/2 tsp baking powder
1 tsp baking soda
whisk together

Pour wet into dry and lightly mix it together until flour disappears.
Add 1/2 cup chopped dates
Add to muffin tray.
Jumbo muffins take 20 mins for 350 degrees

Jon makes another dish to go with your summer BBQ, baked beans with Field Roast Sausages.

-Soak 2 cups navy beans for 8 hours
-Bring large pot of water and 2 tbsp salt to boil
-Boil beans for 1 hour then strain but save 2 cups of the liquid

1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 tsp salt and dash pepper
1/4 cup brown sugar
1/4 cup molasses
2 tbsp tomato paste
1 tbsp spicy brown mustard

Mix in bowl add to beans & cook 1-1 1/2 hours at 350 degrees

Vegan Tamales:
Dried corn husks
Saute over medium heat with olive oil
1 medium onion diced
8 cloves garlic (crushed)
1 1/2 tsp chili powder
half tube Gimme Lean ground beef (or your favorite fake meat)
2 cups cooked black beans
1 tsp salt
1 tsp pepper
1 tbsp apple cider vinegar
stir all together
remove from heat and blend it together

Dough mixture:
3 1/4 cups corn flour masa
3 cups veggie broth or water
1/2 canola oil
1/2 tsp baking powder
1 tsp sea salt
1 tbsp coconut nectar
1 tbsp chili powder
mix till it forms a ball of dough

assemble tamales in the corn husks and place in steamer for 1 hour

S’mores Crispy Treats
1 bag (2 cups) vegan marshmallows
3 tbsp Earth Balance Buttery Spread
2 cups graham crackers (crumbled) We used these http://bit.ly/KjW4Ei
3 cups crisp rice cereal
2 tbsp agave nectar
2-3 tbsp vegan chocolate

Large pot on medium heat
melt butter
add agave
add marshmallows except small handful
stir till melted
add rice crisp and stir take off heat
add to dish and spread evenly
add leftover marshmallows and some
crumbled graham crackers to top
melt chocolate and drizzle on treats
cut into squares and enjoy

preheat oven 350

1/4 cup Earth Balance Buttery Spread (room temp)
1/4 cup Earth Balance Shortening
1 cup sugar
3/4 cup silken tofu
1 tsp vanilla extract
1/4 cup almond milk
1 tbsp peanut butter
1/2 cup cocoa powder
1/2 tsp baking powder
1/4 tsp salt
2/3 cup flour
1/4 cup agave nectar
handful of chocolate chips (vegan)
Bake for 40-45 mins at 350 degrees

Vegan Pad Thai for two just in time for Valentine’s Day!

Ingredients for vegan Pad thai for two:
1/4 cup olive oil
2 cloves shredded garlic
1/2 tsp coriander
1/4 tsp crushed red pepper flakes
3 tbsp sugar
1 tsp onion powder
1/2 tsp vinegar (we used apple cider vinegar)
1/2 cup sliced baked tofu (we made this in previous episode-very easy)
1 1/4 cup veggie broth (also in previous episode)
1/2 lb rice noodles
1/4 cup shredded cabbage
1/4 cup shredded carrots
4-5 fresh basil leaves thinly sliced
1/2 tsp sea salt
1 tsp vegan worcestershire sauce (we used The Wizards brand)
1 tbsp fresh lime juice
crushed peanuts and sprouts for garnish ( just a handful to your liking)
